I've not put quantities, apart from making sure there's enough liquid for the amount of stuff you're using quantities can be quite varied! Also I'm writing this from memory and it turns out different every time! This is inspired by a BBC food recipe but I changed it quite alot.
Olive oil (for frying)
Quorn sausages (Or another sort, but I recommend quorn or something that's quite firm and won't fall to bits)
Chopped onion
Chopped rosemary
Chopped garlic cloves
Chopped chili
Various vegetables: carrots, mushrooms, etc chopped into chunks
Various beans (cooked/drained tinned): borlotti, cannellini, etc
Boiling water
Stock cube/s
Cherry tomatoes (halved)
-Cook the sausages according to pack instructions then chop into chunks.
-Heat the oil and fry the onion for 5-10 minutes in a large saucepan.
-Add the rosemary, garlic and chili and fry for a few more minutes.
-Add the vegetables and fry for a few more minutes.
-Add the beans and plenty of boiling water (enough to cover and more) then crumble in the stock cube/s. Season if necessary.
-Simmer for 20 minutes.
-Add the chopped sausages and the halved cherry tomatoes and simmer for another 10 minutes or so, until the liquid has cooked down and the sauce is thick.
-Serve with crusty bread (part baked rolls!)
