Chocolatey cupcakes

This recipe is from http://cookingismypassion.blogspot.com/ with tips added by me from my experience of making them, which is lots as they're very popular! And the cakes are really delicious! They're like brownies crossed with cupcakes. I use Green and Blacks organic dark chocolate, though anything with 70%+ cocoa content is good.

220g dark chocolate
250g butter
3 large eggs (or 4 medium)
200g castor sugar
1 1/4 cups plain flour
pinch of salt
Cake cases

180 degrees

-Melt the chocolate and butter together. Either in a microwave on a medium heat stirring every minute or so, or in a bowl over a pan of boiling water, stirring regularly.
-Cream the eggs and sugar together (with a whisk, preferably).
-Beat (again, preferably with a whisk) in the chocolate/butter mixture.
-Gradually sift in the flour and salt, continuing to beat the mixture.
-Spoon into cake cases, filling each case about 3/4 full.
-Bake for 10 minutes. They should still be soft when you take them out, if you stick a knife in them some mixture should stick to them. They firm up when they've cooled. Though they are extra yum just out of the oven!
