Ratatouille is really easy to make and is yummy on its own or with jacket potatoes, pasta, anything really. And it can be reheated in the oven or microwave loads and never seems to overcook!
Any mix of vegetables, beans, herbs, etc. E.g...
-Corgettes
-Red peppers
-Yellow peppers
-Chesnut mushrooms
-Red kidney beans (tinned is easiest, you have to soak the dry ones for ages)
-Oregano
-Olive oil
-Tinned chopped tomatoes
Gas mark 6ish, for quite some time!
-Roughly chop all the vegetables and spread them out in a deep roasting tin, drizzle with olive oil, sprinkle with oregano and shake to mix everything up.
-Cook until slightly browned, remember to shake the tin every now and then during the cooking so it all cooks evenly.
-Drain the red kidney beans and mix them in with the vegetables.
-Pour enough tinned tomatoes over the vegetables/beans to cover, stirring if necessary.
-Put back in the oven until the tomato has thickened.
