Sweet potato and stir fried vegetables on a bed of spinach with pesto.

Thought I best have a recipe that was vaguely posh and had one of those long names that had all the ingredients. I just made it up, then cooked it, and have just finished eating it, it was yummy :D

1/4 of a large sweet potato cut into chunks
1/2 a corgette chopped into thin slices
1/4 of a red pepper cut into chunks
1/4 of a yellow pepper cut into chunks
2 mushrooms cut into chunks
Large handful of spinach leaves
2 tbsps of green pesto
Olive oil
Black pepper

Gas mark 6


-Roast the sweet potato with a tbsp of pesto and some olive oil for about 15 minutes.
-Stir fry the courgette, peppers and mushrooms with alittle black pepper and olive oil until browned.
-Toss the spinach leaves with a tbsp of pesto and put in a dish.
-Spread the stir fried vegetables on top of the spinach then add the sweet potato.
